- 3 oranges, rind thinly peeled into extensive strips
- 260g caster sugar, plus more, to coat
- 300g darkish chocolate (70% cocoa solids), chopped
- 50g flaked almonds, toasted
- 190g unsalted butter, softened

- 60ml (1/four cup) thick cream, plus more, to serve

- Place rind in a saucepan, cover with water and convey to the boil. Drain, then repeat manner twice. Return rind to pan, upload 110g (1/2 cup) sugar and 125ml (1/2 cup) water. Spoon right into a 20cm greased and baking paper-baselined cake tin. Bake on bottom shelf of oven for 50-55 mins or until a cake tester comes out smooth. Stand cake in tin for 10 minutes, then flip out onto a cord rack to chill absolutely.
- Stir orange chocolate, remaining butter and cream over a pan of simmering water till melted. Cool to the consistency of thick cream, then unfold over cake. Leave to set.
